Eric Ripert's New DC Bistro Targets Nov. 8 Opening

Popular New York chef Eric Ripert of Le Bernardin fame has been at work of late on a new establishment in the nation's capital. Outward appearances suggest the final stages of preparation, and indeed sources tell Cork & Knife that Ripert is currently targeting a Thursday, November 8th opening.
West End Bistro will be located in the Ritz-Carlton Hotel at 22nd and M Streets in the Northwest quadrant of the city. The menu will feature upscale bistro fare, with entrees ranging from $18 to $34 and including such American favorites as burgers and roast chicken, alongside more international choices like veal cheeks, vichyssoise, and pate.
Situated on a busy street corner with massive glass windows, the dining room is already visible from the street, showcasing a rich, dark wood interior with many booths. In recent days, staff could be seen apparently checking out table settings, as a few tables in the rear of the restaurant were set up as they might be for service while workmen continued to install entrance doors and other final touches.
The previous occupant of the space maintained an open kitchen that could be viewed through similar large windows from the street. No word on what plans Ripert may have in this area, as that portion of the space continues to have the glass covered with paper to obscure the view.
